Ingredients

Directions

Prepare

  1. Soak the gum arabic in water until soft.

Make the marshmallow

  1. In a double boiler, add the confectioner’s sugar and stir until thick and white.

  2. Test in water; it should form a firm, but not hard ball.

  3. Remove from heat and gradually stir in the beaten egg whites for a spongy texture.

  4. Flavor with orange flower and pour into a pan dusted with cornstarch.

Set and store

  1. Once cool, cut into squares and pack in confectioner’s sugar until needed.

  2. It will dry and harden in a few days.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

  1. Sugar + orangetop 20% of all pairs

Sugar and orange barely smell alike, yet cooks put them together in 19,212 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gum arabic
Softened in water, it provides the body and chewy structure of the paste.
Confectioner’s sugar
Dissolves into the mixture and adds sweetness while thickening it as it cooks.
Egg whites
Whipped and folded in to trap air, giving the paste a spongy texture.

The step that matters

Testing the ball stage in water. The sugar must reach a firm but not hard ball in cold water; undercooked paste stays sticky and overcooked paste becomes brittle and hard once set.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
