Brioche Pudding a LA Duchesse

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix the flour and yeast.

  3. In another bowl, cream the butter and sugar until light and fluffy.

  4. Add the whole eggs and egg yolks to the butter mixture, mixing well.

  5. Gradually add the flour mixture to the wet ingredients, stirring until combined.

  6. Fold in the candied pineapple and dried cherries.

  7. Pour the batter into a greased baking dish.

  8. Bake for about 30-40 minutes or until golden brown and a toothpick comes out clean.
