Mock Turtle

  1. Remove the tongue, jawbone, and offensive bones from the calf's head.

  2. Cut off the ear and remove the brains.

  3. Soak the half head in warm water for 1 hour.

  4. Cut the inside of the ear away.

  5. Place the half head, tongue, and ear in a pot with 4 quarts of water and bring to a boil.
