Raised Pie of Fowl a l’Aspic
Ingredients
Directions
Sift flour onto a pastry slab.
In a pot, melt lard in boiling water until dissolved.
Make a hole in the center of the flour and pour in the lard and water mixture.
Mix with a wooden spoon, then use your hands to blend the dough until stiff.
If needed, moisten any dry flour with a little more water.
Wrap the dough in a hot, damp cloth and let it rest for 10 minutes.
Knead the dough until smooth, then cut off about one-fourth and roll it out to less than ¼ inch thick.
