Lamb Cutlets with Asparagus Peas

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Trim the lamb cutlets as needed.

  2. Make fine bread crumbs from the stale bread by rubbing through a wire sieve.

  3. In a bowl, beat the whole eggs and yolks, then add pepper, salt, and clarified butter.

Coat and bake

  1. Dip each cutlet into the egg mixture, allowing excess to drip off.

  2. Coat each cutlet in the bread crumbs.

  3. Butter a sauté pan and place a round of buttered paper in it.

  4. Arrange the cutlets in the pan and cover with another round of buttered paper.

  5. Bake in a 400°F (200°C) oven for 2-3 minutes until firm and white.

What each ingredient does

Lamb cutlets
Provide the main meat, which is cooked quickly so the coating sets while the inside stays tender.
Bread crumbs
Form a crisp, golden crust that protects the cutlet during cooking.
Eggs
Bind the crumbs to the meat and set to a firm coating in the oven.
Clarified butter
Adds richness and helps the coating brown and cook evenly.

The step that matters

Baking the coated cutlets. Egg proteins set firm at moderate heat, so a short bake at the stated temperature firms the coating without drying the meat. Overbaking toughens the lamb and can scorch the crumbs.
