Quenelles of Dory a LA Pascaline

Ingredients

Directions

  1. Remove the skin from the dory fillets and pound the flesh in a mortar.

  2. Rub the pounded dory through a wire quenelle sieve.

  3. Chop the dory bones and place them in a stewpan with ½ cup white stock and 1½ cups water.

  4. Add vegetables and a bouquet of parsley, thyme, and bay leaf; boil slowly for 1 hour.

  5. Strain the stock and mix it with enough white roux to thicken to single cream consistency.

  6. Simmer for 30 minutes, removing any scum and fat, and reduce to proper consistency.

  7. Stir in 1 cup double cream and pass through a tammy cloth.

  8. Add 1 tablespoon butter, 6 finely chopped champignons, and juice of ½ lemon.

  9. Finely chop the blanched parsley and mix it into the sauce just before serving.

  10. Mix the dory flesh into quenelles, model, cook, and serve as directed for pheasant quenelles.
