Ingredients

Directions

  1. Roll out the puff paste to ¼ inch thick. Cut away any flawed parts.

  2. Egg the rim of the short paste with egg yolks.

  3. Cover the tart with puff paste, pressing it down on the egged border.

  4. Crimp the edges with a knife held at a slant.

  5. Trim off excess paste and notch the border neatly.

  6. Make small holes on each side of the tart to release steam.

  7. Cut a round ring in the center of each tart, 2.5 inches wide.

  8. Moisten the center of the tarts with a clean brush dipped in water.
