Stewed Partridges

Ingredients

Directions

  1. Trim and boil Brussels sprouts in salted water for 3 minutes. Strain and cool.

  2. Cut carrots into slices about ⅛ inch thick. Use tin cutters to create rings from the slices.

  3. In a stewpan, combine carrot rings, butter, sugar, and salt. Cover with water and boil until tender.

  4. Strain the essence from the partridge bones.

  5. In a stewpan, combine Brussels sprouts with the essence and gently boil until done. Remove from heat immediately.

  6. Combine remaining essence with Espagnol sauce and sherry. Simmer on low for 30 minutes, skimming as needed.
