Ingredients

Directions

  1. Roast the partridges until cooked through.

  2. Prepare potato paste and fix it around the edge of a serving dish.

  3. Pour off excess stock from the partridges and return them to the oven to dry.

  4. Brush the partridges with glaze and return them to the oven briefly.

  5. Apply another coat of glaze and leave the oven door open to dry the glaze.

  6. Arrange eight partridges on the potato border and cover with entree covers.

  7. Heat the Brussels sprouts in a bain-marie.

  8. Skim and taste the sauce, adjusting as necessary.

  9. Strain the Brussels sprouts and place them in the center of each partridge.

  10. Pour the sauce around the carrots in each dish, cover, and serve.
