What each ingredient does

Egg yolks
Add richness and help bind the mixture into a smooth, cohesive paste.
Whole egg
Adds structure and binding so the quenelles hold their shape when cooked.
Butter
Adds fat and richness, giving the quenelles a tender, moist interior.
Fish
Forms the main body of the quenelles and gives them their savoury flavour.

The step that matters

Fry the quenelles until golden brown. Breadcrumbs brown and crisp in hot fat through the Maillard reaction and caramelisation, while the interior sets. Frying too cool makes them greasy, and frying too hot can brown the crust before the centre is heated through.

Swap the white pepper

How well each one fits the dish's main ingredients (egg, butter, fish, nutmeg, truffle):

  1. Cinnamonfits better
  2. Parsleyfits better
