Ingredients

Directions

Prepare the rolls

  1. Order 15 small round bread rolls from the baker the day before serving.

  2. Cut the tops off the rolls.

  3. Hollow the rolls out, removing all the bread inside.

  4. Fill the rolls with chicken quenelle filling mixed with crawfish butter.

  5. Replace the tops on the rolls.

  6. Soak the rolls briefly in reduced consommé.

  7. Drain the rolls.

Cook and serve

  1. Place the rolls in a buttered sauté pan over hot coals to cook the filling without browning the rolls.

  2. Cover the pan.

  3. Add heat on top until the filling is firm to the touch.

  4. Carefully remove the rolls.

  5. Place the rolls in a serving dish with the crawfish tails and small white mushrooms.

  6. Drain the mushrooms on a towel and add them to the dish.

  7. Garnish with a sprig of chervil.

What each ingredient does

Bread rolls
Hollowed shells that hold the filling and keep its shape while it cooks.
Chicken quenelle filling
Sets firm when heated, giving the filled rolls a tender, custard-like texture.
Crawfish butter
Adds richness and moisture to the filling and carries its shellfish flavour.
Reduced consommé
Flavours and moistens the rolls before cooking, adding savoury depth.
Crawfish tails
Provide the main shellfish flavour and tender bite in the finished soup.

The step that matters

Cooking the filled rolls gently without browning them. Gentle covered heat lets the chicken quenelle filling set through while the bread stays pale and soft. High direct heat would brown and toughen the rolls before the filling is firm.

Swap the chervil

How well each one fits the dish's main ingredients (bread, chicken, butter, mushroom):

  1. Garlicfits better
  2. Thymefits better
  3. Marjoramfits better
