Timballe De Volaille a LA Parisienne

Ingredients

Directions

  1. Prepare chicken forcemeat, making it firmer by using only one-third of the sauce.

  2. Grease a mold thoroughly with butter.

  3. Decorate the bottom with cooked truffles.

  4. Line the sides of the mold with decoration, leaving one inch from the bottom.

  5. Cut a round of paper slightly smaller than the mold's bottom, grease it, and fill it with half an inch of forcemeat, smoothing it with a knife.

  6. Place the paper on a small lid, invert the mold onto it, and press lightly to remove air.

  7. Put the mold in a hot water bath to melt the butter and remove the paper.

  8. Prepare two strips of greased paper the height of the mold, filling them with the same amount of forcemeat, and apply them to the sides of the mold.

  9. Smooth the forcemeat to avoid cavities.

  10. Fill the interior with a white financial stew or chicken blanquette, leaving half an inch from the top, and cover with forcemeat.

  11. Cook in a water bath for two.
