What each ingredient does

Almonds
Provide the main body and flavor of the dish as a fine almond milk base.
Cream
Adds richness and a smooth, soft texture to the set dessert.
Powdered sugar
Adds sweetness and dissolves easily into the almond milk.
Fish glue (gelatin)
Sets the liquid mixture into a firm, sliceable dessert as it chills.

The step that matters

Straining the almond milk. Grinding with water and straining through cloth removes the solid pulp, leaving a smooth liquid. Any remaining grit will show in the finished set texture.
