Glaces Ou Sorbets Aux Fruits
Ingredients
Directions
Pour the sweet fruit juice into a sorbet maker, filling it slightly over half full.
Close the sorbet maker and place it in a wooden bucket.
Surround the sorbet maker with a mixture of 6 parts crushed ice and 2 parts coarse sea salt.
Add calcium chloride if desired to speed up freezing.
Stir the sorbet maker continuously to freeze the contents quickly.
Once the liquid starts to freeze, stir occasionally with a long spoon until fully frozen.
Serve immediately in small glasses without letting it melt.
