What each ingredient does

Chicken
Provides rich meaty flavour and gelatin that gives the finished broth body.
Veal shank
Adds collagen-rich body and depth of flavour to the long-simmered broth.
Leeks
Contribute mild sweetness and aromatic flavour to the broth.
Onions
Add savoury sweetness and aromatic depth as the broth simmers.
Chicken fillets
Their proteins bind impurities during clarification, leaving a clear consommé.

The step that matters

Skimming the foam after boiling. Foam and impurities that rise early can cloud the broth and muddy its flavour. Removing them keeps the consommé clear and clean-tasting.
