Olives Farcies Pour Garnitures

Ingredients

Directions

  1. Remove the pits from the olives and blanch them in boiling water for 3 minutes.

  2. Stuff the olives with chicken stuffing.

  3. Prepare 900 grams of chicken combs by placing them in a pot with enough water to cover them completely.

  4. Bring to a boil and stir gently with a large spoon.

  5. Watch closely; as soon as the skin starts to lift, remove from heat and add fresh water.

  6. If you cook too long after the skin lifts, the blood will coagulate, making it impossible to clean them.

  7. Remove the skin and trim the combs to remove all feathers, ensuring a clean cut.

  8. Soak the combs in salted water for 6 hours, then wash them thoroughly and place them in cold water, changing it several times until they are porcelain white.

  9. Cook the cleaned combs in plenty of water with butter, salt, and lemon juice, being careful not to overcook them as they are meant to garnish dishes.
