To Preserve Green Peas for Winter Use
Ingredients
Directions
Shell the peas and place them in a kettle of water to boil.
Once they have just boiled, pour them into a colander to drain.
Spread the peas on a cloth and cover with another cloth to dry.
Optionally, place them in a warm oven to finish drying.
Store the dried peas in bags or bottles.
When ready to use, soak the peas in water for an hour.
Boil the soaked peas in cold water with a little salt until tender.
