Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Graham flour
Provides the bulk structure of the bread, with its bran adding a coarse, hearty texture.
Sour milk
Its acidity reacts with the baking soda to produce gas that lightens the batter.
Baking soda
Reacts with the acidic sour milk and molasses to release carbon dioxide for rising.
Molasses
Adds moisture, sweetness, and a dark color with a robust flavor.
Egg
Binds the batter and adds moisture and structure to the crumb.
Raisins
Add pockets of sweetness and moisture throughout the loaf.

The step that matters

Mix the batter quickly. Once the acidic liquid meets the baking soda and baking powder, gas forms right away. Overmixing develops gluten and knocks out gas, so a quick, gentle mix keeps the loaf light.

Swap the raisin

How well each one fits the dish's main ingredients (flour, sugar, molasses, milk, egg, corn):

  1. Raisinthe original
  2. Vanillafits about as well
  3. Figfits less well
  4. Blueberryfits less well

Fit is the average pairing score against flour, sugar, molasses, milk, egg, corn. Candidates are from the same food group and used in at least 100 recipes.
