Directions

Prepare

  1. Trim and wash the cabbage in cold water, checking for insects.

  2. Cut the cabbage into quarters, leaving the stem intact, and soak in cold water for 1 hour.

Boil

  1. Boil a pot of water with salt, then add the cabbage and boil for 1.5 hours, skimming occasionally.

  2. Drain the cabbage in a colander and cool it under running cold water until completely cold.

  3. Discard the first water, wash the pot, and boil fresh water.

  4. Boil the cabbage in the second water for 2 to 2.5 hours until tender.

Serve

  1. Drain the cabbage again, pressing out moisture, and cut it into quarters.

  2. Add bits of fresh butter and a little pepper, cover, and serve hot.

What each ingredient does

Cabbage
Forms the main body of the dish, becoming soft and tender through long simmering.
Fresh butter
Adds richness and a silky mouthfeel to the warm cabbage.

The step that matters

Draining and pressing the cabbage. Cabbage holds a lot of water after long boiling. Pressing out the moisture before serving keeps the quarters from tasting diluted and lets the butter cling to the surface.

Swap the cabbage

How well each one fits the dish's main ingredients (butter, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits about as well
  4. Cabbagethe original

Fit is the average pairing score against butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
