The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash the veal in cold water and wipe it dry with a clean towel.

  2. Rub the salt into the meat and sprinkle lightly with pepper.

  3. Stuff the veal, roll it up, and skewer it.

Roast

  1. Place the veal on a rack in a dripping pan and lay the salt pork slices on top.

  2. Cook in a 350°F (175°C) oven for 2.5 hours.

What each ingredient does

Veal
Forms the main body of the roast, cooking to a tender, sliceable texture.
Salt pork
Lies on top of the roast, adding fat that bastes the meat as it cooks.

The step that matters

Placing the salt pork slices on top of the roast. The thin fatty slices melt slowly over the meat, basting it and helping keep the lean veal from drying out during the long roast.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
