What each ingredient does

Pork steak
Provides the meat that is cooked slowly and served in the sauce.
Flour
Thickens the pan fat into a smooth, frothy base that gives the sauce body.
Strained tomatoes
Form the liquid of the sauce, adding acidity and a tomato flavour as they simmer.

The step that matters

Stirring the flour into the pan fat. The flour must be stirred until smooth and frothy before the tomatoes are added. Cooking flour in fat, a roux, removes raw starch taste and lets the flour thicken the liquid evenly without lumps.

Swap the tomato

How well each one fits the dish's main ingredients (pork, pepper, flour):

  1. Capsicumfits better
  2. Potatofits better
  3. Turnipfits better
  4. Tomatothe original

Fit is the average pairing score against pork, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
