What each ingredient does

Chicken
Forms the main body of the dish, cooking through to tender meat during roasting.
Bread crumbs
Absorb the herbed butter and form a stuffing that adds body and moisture inside the bird.
Butter
Adds richness and moisture, and promotes browning on the skin.
Flour
Coats the buttered skin, helping it brown and crisp in the oven.

The step that matters

Roast until cooked through. Stuffing slows heat reaching the center of the bird, so the cook should check that the chicken and stuffing are fully cooked rather than relying only on the time.

Swap the sage

How well each one fits the dish's main ingredients (chicken, butter, pepper, flour, bread, parsley, thyme):

  1. Marjoramfits better
