Ingredients

Directions

  1. Singe the chicken and cut it into pieces.

  2. Wash the chicken and place it in a stewpan with boiling water.

  3. When the water boils, skim it and reduce heat to a gentle simmer.

  4. In a small pan, cook the onion and butter gently for 20 minutes.

  5. Remove the onions and add them to the chicken.

  6. Mix 1 tablespoon of flour with the remaining butter until smooth and frothy, then add to the stew.

  7. Mix the remaining flour with ½ cup cold water and stir into the stew.

  8. Add salt and pepper, and cook gently for 3 hours.

  9. After 3 hours, move the stewpan to a hotter part of the stove, add dumplings, and cook for an additional 10 minutes.
