Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the chicken

  1. Split the chicken down the back and singe and wipe it clean.

  2. Leave the tips on the wings, turn them back, and skewer them in place. Fasten the neck under the body and press the chicken flat, skewering the legs back onto the body.

  3. Season the chicken with salt and pepper, then place it in a dripping pan.

Bread and roast

  1. Rub the soft butter over the breast and legs, then sprinkle the bread crumbs on top.

  2. Cook in a 400°F (200°C) oven for 45 minutes, reducing the heat after the first 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the dish, cooking through as it roasts flat.
Butter
Adds fat that carries heat to the surface, helping the crumbs brown and adding richness.
Dried bread crumbs
Form a crisp, golden coating on the outside as they toast in the oven.

The step that matters

Reducing the oven heat after 15 minutes. A high starting heat browns the crumbs and skin quickly; lowering it afterward lets the thicker meat cook through without the coating burning.
