Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
The hard-boiled halves provide the body, and the beaten raw egg binds the crumb coating.
Dried bread crumbs
They form the outer coating that crisps and browns in the hot fat.
Fat for frying
Hot fat transfers heat quickly, crisping and browning the breaded coating.
Bisque sauce
Served around the eggs, it adds moisture and a rich flavour to each bite.

The step that matters

Frying at serving time. The fat must be hot when the breaded eggs go in. Hot fat seals the coating quickly so it crisps rather than soaking up oil, and a short cook keeps the eggs from overheating.
