What each ingredient does

Ox-tail
Releases gelatin and rich flavor into the broth during long simmering.
Lean beef
Adds meaty flavor and body to the broth as it cooks slowly.
Carrots
Add sweetness and aromatic flavor to the soup base.
Onions
Add savory depth and sweetness once browned in butter.
Browned flour
Thickens the broth and adds a toasted, nutty flavor.

The step that matters

Boil for 4 to 6 hours. A gentle, steady simmer over a long time draws gelatin and flavor from the bones and meat. Boiling too hard can cloud the broth and toughen the meat, so keep it at a steady simmer.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, thyme, butter, pepper, flour):

  2. Leekfits better
