Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and sets into a firm, sliceable texture when baked.
Eggs
Bind the meat together so the loaf holds its shape while cooking and slicing.
Crackers
Absorb moisture and help hold the meat mixture together in a tender crumb.
Butter
Adds fat and richness, keeping the loaf moist as it bakes.
Pork
Adds fat and moisture, making the loaf richer and less dry than veal alone.

The step that matters

Bake long and low after basting. A dense meat loaf must cook through slowly at moderate heat so the proteins set evenly. Basting with water helps keep the surface from drying out during the long bake.

Swap the sage

How well each one fits the dish's main ingredients (veal, egg, butter, pepper, pork):

  1. Parsleyfits about as well
  2. Sagethe original
  3. Thymefits less well
  4. Nutmegfits less well

Fit is the average pairing score against veal, egg, butter, pepper, pork. Candidates are from the same food group and used in at least 100 recipes.
