Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the dish and sets into a firm, sliceable texture when cooked.
Eggs
Bind the mixture and help it set firmly as it bakes.
Rolled crackers
Absorb moisture and add body so the mixture holds together.
Cream
Adds moisture and richness, keeping the mixture tender as it cooks.

The step that matters

Baking until set. Eggs set as their proteins coagulate with heat. Pulling the dish too early leaves it loose, while overbaking makes it dry and tough. Check that it is firm and golden before removing it.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, egg, cream, pepper, butter):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Tarragonfits less well
  4. Sagefits less well

Fit is the average pairing score against veal, egg, cream, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
