What each ingredient does

Fresh eggs
Proteins set when heated, forming the poached egg's soft white and firm yolk structure.
Buttered toast
Provides a crisp, buttery base that holds the egg and adds richness.
Boiled ham
Adds savoury, salty flavour and chewy texture beneath the egg.

The step that matters

Simmer the eggs for 2 minutes until cooked. Egg white sets at lower temperatures than the yolk, so timing controls whether the white is fully set while the yolk stays runny. Too long makes the yolk firm and rubbery; too short leaves the white translucent.
