Blackberry Shortcake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, baking powder, and salt.

  3. Cut in the shortening until crumbly.

  4. Add water or milk to form a dough.

  5. Roll the dough to 1½ inches thick and bake until golden.

Assemble and serve

  1. Split the baked shortcake and butter both sides.

  2. Mash the blackberries with sugar and layer them on the bottom half of the cake.

  3. Replace the top half and serve with sweetened cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the main structure of the shortcake as its proteins set during baking.
Shortening
Cut into the flour to create a tender, crumbly texture by coating flour particles and limiting gluten.
Baking powder
Releases gas when heated, helping the shortcake rise and become light.
Blackberries
Add tart fruit flavor and moisture to the filling when mashed with sugar.
Sugar
Sweetens the blackberries and helps draw out their juices into a syrupy filling.

The step that matters

Cutting in the shortening until crumbly. If the shortening is overworked or melts into the flour, the shortcake loses its tender, flaky crumb. Solid pieces of fat left in the dough create layers and tenderness as they melt in the oven.
