Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Beat the yolks of the eggs well and mix with the apple sauce.

Make the meringue

  1. In a separate bowl, beat the egg whites to a stiff froth.

  2. Gradually add the sugar to the egg whites while continuing to beat.

  3. Spread the meringue over the apple sauce.

Bake

  1. Bake in the oven for 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites whip into a foam that gives the meringue its structure; yolks enrich the apple base.
Apple sauce
Provides moisture and a soft, tender body under the meringue.
Sugar
Sweetens the dish and dissolves into the whites, helping the foam hold its shape.

The step that matters

Beating the egg whites. Any trace of yolk or grease prevents whites from whipping fully, so yolks must be cleanly separated and the bowl kept dry. Adding sugar gradually while beating dissolves it into the foam, helping the meringue stay stiff and glossy.

Swap the apple

How well each one fits the dish's main ingredients (egg, sauce, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Applethe original

Fit is the average pairing score against egg, sauce, sugar. Candidates are from the same food group and used in at least 100 recipes.
