Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and give the pancakes structure as they set.
Flour
Forms the body of the batter and sets to give the pancakes structure.
Butter or lard
Fat for frying that helps the pancakes brown evenly and adds flavour.
Apple
Adds fruit moisture and tartness that contrasts with the sweet filling.
Brown sugar
Adds sweetness and caramelises slightly in the oven for flavour and colour.

The step that matters

Cook each side until golden, not dark. Medium heat lets the batter set through while browning gently. Too hot a pan scorches the outside before the centre sets, leaving the pancake raw inside and bitter on the surface.

Swap the apple

How well each one fits the dish's main ingredients (egg, milk, sugar, flour, butter, cinnamon):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits better
  4. Applethe original

Fit is the average pairing score against egg, milk, sugar, flour, butter, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
