A Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Parboil the veal pieces in water until about half cooked.

  2. Remove the veal pieces and let them cool.

  3. Season the gravy with pepper, coarse sea salt, mace, and salt pork.

  4. Dredge the gravy in a little flour.

Assemble and bake

  1. Line the sides of your pie dish with the paste.

  2. Add the meat and gravy to the pie dish.

  3. Cover the pie with a thick layer of paste.

  4. Cut a small hole in the top.

  5. Bake in a hot oven at 400°F (200°C) for half an hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meat, which partly cooks by parboiling before baking.
Flour
Dredging thickens the gravy and helps it cling to the meat.
Salt pork
Adds fat and savory flavor to the gravy.
Common paste
Forms the pastry shell and top crust that encloses the filling.

The step that matters

Parboil the veal until about half cooked. Parboiling partly cooks the meat so it does not need to finish cooking in the short bake. Removing it at about half cooked keeps it from drying out or turning tough while the pie bakes.

Flavor stand-ins for the mace

How well each one fits the dish's main ingredients (veal, pepper, pork, flour):

  1. Sagebetter flavor fit
  2. Marjorambetter flavor fit
  3. Turmericbetter flavor fit
  4. Macethe original

Fit is the average pairing score against veal, pepper, pork, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
