Rich Puff Paste

Ingredients

Directions

Prepare the butter and flour

  1. Wash the butter in cold water and divide it into three parts.

  2. Make each part into thin cakes and place them on ice to harden.

  3. Sift the flour and rub one cake of butter into it until well combined.

  4. Mix lightly with cold ice-water until a dough forms.

Laminate the dough

  1. Sprinkle a little flour on the work surface.

  2. Roll the dough out very thin, rolling away from you.

  3. Roll out one cake of butter as thin as possible. Lay the butter on the dough. Dust the dough with flour.

  4. Roll the dough up. Roll out the dough thin again.

  5. Repeat with the second cake of butter.

Finish

  1. Cut the dough into pieces as needed.

  2. For edging, roll out a piece long enough to go around the plate without seams, using three or four layers of thin paste.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

    Shared aroma: isobutyraldehyde (malty, green).

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the dough structure that holds the layers together as it is rolled.
Butter
Forms separate fat layers that steam and lift the dough, producing flaky texture.

The step that matters

Keeping the butter cold while rolling. If the butter softens and blends into the dough, the separate layers are lost and the pastry will not puff into flaky sheets. Chilling the butter between rolls keeps it in distinct layers.
