Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bones
Release gelatin, collagen and flavour into the water during long simmering.
Water
Extracts the flavour and body from the bones and vegetables over time.
Onion
Adds savoury sweetness and aromatic depth to the broth.
Carrot
Contributes natural sweetness and background flavour to the broth.
Celery
Adds a fresh, aromatic vegetal note to the broth.

The step that matters

Skimming off the scum after boiling. Foam that rises as the liquid heats contains impurities and coagulated proteins. Removing it early keeps the broth clearer and cleaner tasting.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, parsley, celery):

  1. Parsnipfits better
  2. Turnipfits better
  3. Leekfits better
