Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set to a soft, tender texture as they simmer, forming the main topping on the toast.
Butter
Adds richness and flavour, and with flour forms the base of the sauce.
Flour
Thickens the sauce when cooked with butter and then combined with milk.
Milk
Forms the liquid body of the sauce, which thickens as it is heated.
Vinegar
Acidity in the poaching water helps the egg whites set more compactly.

The step that matters

Simmer the eggs for three minutes. Egg whites set quickly in hot water, so the timing controls whether yolks stay runny or cook firm. Vinegar in the water helps the whites hold a neat shape.

Swap the celery

How well each one fits the dish's main ingredients (egg, vinegar, butter, flour, milk, parsley):

  1. Tarragonfits better
  2. Capersfits better
  3. Nutmegfits better
  4. Celerythe original

Fit is the average pairing score against egg, vinegar, butter, flour, milk, parsley. Candidates are from the same food group and used in at least 100 recipes.
