Why it works: Pepper and celery match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓
Beef Loaf
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat the oven to 350°F (175°C).
In a large bowl, combine the chopped beef, rolled soda crackers, beaten eggs, sweet milk, and butter.
Mould the mixture with your hands until it is perfectly solid.
Season with salt, pepper, and celery salt to taste.
Bake
Place the mixture in a greased pan with a little water.
Baste the loaf as you would roast beef.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Raw beef
- Provides the main body and meaty flavour of the loaf.
- Soda crackers
- Absorb liquid and help bind the mixture so it holds its shape.
- Eggs
- Bind the mixture and set when heated, giving the loaf structure.
- Sweet milk
- Adds moisture and softness to the loaf.
- Butter
- Adds fat, richness and flavour to the loaf.
The step that matters
Mould the mixture until perfectly solid. The mixture must be packed firmly so the loaf holds together when sliced. Loose packing lets it crumble and can leave air pockets that dry out during baking.
Swap the celery
How well each one fits the dish's main ingredients (beef, egg, milk, butter, pepper):
- Nutmegfits better
- Parsleyfits better
- Cinnamonfits better
- Celerythe original
Fit is the average pairing score against beef, egg, milk, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
