Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Cut a deep piece from the stem end of each tomato and remove the insides.

  3. Mix the insides with bread crumbs, salt, pepper, and sugar.

Bake

  1. Stuff the mixture back into each tomato and place a piece of butter on top.

  2. Place the tomatoes in a baking pan and bake for about 30 minutes, or until nicely browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body and juice that softens and cooks down during baking.
Bread crumbs
Absorb tomato juice and hold the stuffing together, giving it body.
Butter
Adds fat and richness and helps the top brown as it bakes.
Sugar
Adds sweetness that balances the tomatoes' acidity and aids browning.

The step that matters

Bake until nicely browned. Baking long enough lets the tomato juices cook down and the top brown. Pulling them early leaves the filling wet and pale.

Swap the tomato

How well each one fits the dish's main ingredients (bread, pepper, sugar, butter):

  1. Capsicumfits better
  2. Potatofits about as well
  3. Sweet potatofits about as well
  4. Tomatothe original

Fit is the average pairing score against bread, pepper, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
