Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. In a bowl, combine the corn, beaten eggs, flour, baking powder, salt, and pepper.

Fry

  1. Heat a mixture of butter and lard in a skillet over medium heat.

  2. Drop spoonfuls of the corn mixture into the hot skillet.

  3. Fry until golden brown on both sides, about 3-4 minutes per side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn
Provides the main body and sweetness of the fritters.
Eggs
Bind the corn and flour together and help set the fritters as they cook.
All-purpose flour
Adds structure so the batter holds its shape in the pan.
Baking powder
Releases gas that lightens the fritters and helps them rise slightly.

The step that matters

Frying the spoonfuls. The skillet must be hot enough to brown the outside quickly. If the pan is too cool, the batter absorbs fat, becomes greasy, and steams instead of browning.
