Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the syrup that sets into a smooth, sweet paste as it cools.
Cream of tartar
Acid that helps prevent sugar from crystallizing into a grainy texture.
Blanched almonds
Provide bulk, body and nutty flavor to the cooled paste.

The step that matters

Boiling the syrup to the right stage. The mixture must reach the point where it holds its shape in water. Boiling too little leaves the paste soft and sticky, while boiling too long makes it hard and difficult to knead.

Swap the almond

How well each one fits the dish's main ingredients (sugar, cream, vanilla):

  1. Chestnutfits about as well
  2. Almondthe original
  3. Hazelnutfits about as well
  4. Pistachiofits less well

Fit is the average pairing score against sugar, cream, vanilla. Candidates are from the same food group and used in at least 100 recipes.
