Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cottage cheese
Provides moisture and tender structure to the soft dough.
Eggs
Bind the dough and help it hold its shape while frying.
Sour milk
Its acidity reacts with baking soda so the dough rises slightly and stays tender.
Baking soda
Reacts with the acidic sour milk to produce gas that lightens the dough.
Butter
Adds richness and flavor to the dough.

The step that matters

Fry until golden brown. Frying in hot fat browns the surface through the Maillard reaction, adding flavor and color. If the fat is not hot enough, the noodles soak up oil and turn greasy instead of crisping.
