Why it works: Potato and ginger work together. They rank in the top 12% of all ingredient pairs, and cooks put them together in 992 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Hop Yeast

Ingredients

Directions

Make the hop yeast

  1. Boil hops in water for 15-20 minutes.

  2. Add grated potatoes, sugar, coarse sea salt, and ginger to the pot.

  4. Let the mixture cool, then add the yeast cake soaked in warm water.

  5. Stir well and let it rise in a cool place, covered.

Make the dough and bake

  1. When ready to bake, use ⅓ to ½ cup of this yeast.

  2. Boil and mash 2 potatoes, then add sugar and potato water.

  3. Mix in warm water to achieve the right temperature, then add yeast and flour to form a thick batter.

  4. Let it rise overnight in a warm place.

  5. Add a little salt, mix, and shape into loaves.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hops
Adds bitter and aromatic flavour and helps preserve the starter.
Potatoes
Provide starch and moisture that feed the yeast and give the bread a soft crumb.
Sugar
Feeds the yeast so it ferments and produces gas for rising.
Yeast cake
Provides the live yeast that leavens the starter and dough.
Flour (in the method)
Forms the gluten network that traps gas and gives the loaves structure.

The step that matters

Let the dough rise overnight in a warm place. Yeast needs time and steady warmth to produce enough gas for a light loaf; too cold slows fermentation, and over-proofing can collapse the structure.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, ginger):

  1. Mustardfits better
  2. Capsicumfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
