Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lift, while yolks add richness and help bind the batter.
Flour
Provides structure as its starch sets during baking, holding the puffs' walls.
Butter
Adds fat for tenderness and flavor, and enriches the batter.
Sweet milk
Supplies liquid that turns to steam in the oven, helping the puffs rise.

The step that matters

Gently fold the beaten whites into the mixture.. The whites hold air bubbles that expand in the oven and lift the puffs. Vigorous stirring deflates them, so the cups bake flat and dense.
