Chicken Croquettes

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure. The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the mixture

  1. In a saucepan, melt the butter and add the stock.

  2. Once heated, add the chicken and bread crumbs, stirring well.

  3. Remove from heat and mix in the beaten eggs.

Bake and serve

  1. Transfer the mixture into greased molds or cups.

  2. Place the molds in a baking dish filled with hot water.

  3. Bake in a 400°F (200°C) oven for 15 minutes.

  4. Alternatively, shape the mixture and deep fry in hot oil.

  5. Serve with a rich sauce made from milk thickened to the consistency of cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and set it firm when cooked.
Bread crumbs
Absorb the liquid and give the mixture body for shaping.
Butter
Adds richness and fat for flavour and a softer texture.
Stock
Adds moisture and savoury flavour to the chicken mixture.
Broken pieces of cooked chicken
Provides the main protein and flavour of the croquettes.

The step that matters

Remove from heat before mixing in the eggs. Eggs scramble when exposed to high heat, which would leave lumps and uneven binding instead of a smooth mixture that sets evenly.
