What each ingredient does

Strawberries
Provide the fruit, flavour and natural pectin-bearing pulp that forms the jam's body.
Granulated sugar
Draws water out of the fruit and, with boiling, helps the jam set and preserves it.

The step that matters

Boil the mixture for seven minutes. Sugar and fruit must reach a rolling boil long enough to concentrate the juice; too little boiling leaves a runny jam that will not set.
