Currant Jam

Ingredients

Directions

Prepare

  1. Wash the currants and remove them from the stems.

  2. Measure the currants and sugar, then let them stand overnight.

Cook

  1. In the morning, bring the mixture to a boil, stirring almost continually.

  2. Test for readiness by placing a small amount on a saucer and cooling it on ice; if it congeals, it's ready.

Set and seal

  1. Pour into jelly glasses and finish setting in the sunshine.

  2. Seal as you would jellies.

What each ingredient does

Currants
Provide the fruit flavor and natural pectin that help the jam set.
Sugar
Adds sweetness and helps the jam thicken and keep well.

The step that matters

Testing for readiness. Jam sets as it cools because pectin and sugar form a gel only once enough water has evaporated. Cooling a small sample on ice shows whether it will congeal before the whole batch is overcooked or left runny.
