What each ingredient does

Fowl
Provides the main protein, which becomes tender during long, gentle cooking.
Rice
Absorbs the cooking liquid and adds starch that thickens the dish as it cooks.
Tomato
Adds acidity and moisture that help form the savory base of the sauce.
Okra
Releases natural starch during simmering, adding body and thickening the liquid.
Onion
Softens and sweetens as it cooks, building the flavor base of the dish.

The step that matters

Simmer for 30 minutes, then place in a fireless cooker. The initial simmer sets the layers before the long resting period. Too little heat or time leaves the rice and fowl undercooked, since the fireless cooker holds heat but adds little.

Swap the onion

How well each one fits the dish's main ingredients (rice, tomato, okra, pepper):

  1. Capsicumfits better
  2. Eggplantfits better
