Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Prepare 12 artichokes as in previous instructions.

  2. In a saucepan, melt 2 tablespoons of butter. Lightly fry the chopped onion.

Make the stuffing

  1. Add the chopped veal, cooked artichoke bottoms, bread crumbs, parsley, chives, salt, pepper, and reduced Allemande sauce to the saucepan. Mix well.

  2. Stuff the artichokes with the mixture.

Bake and serve

  1. Sprinkle additional bread crumbs on top.

  2. Arrange the stuffed artichokes in a buttered pan. Place a small piece of butter on each artichoke.

  3. Bake in a hot oven at 400°F (200°C) until golden.

  4. Serve with a reduced Madeira wine sauce, if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Artichokes
Hold the stuffing and cook into a tender, edible vessel.
Braised veal
Adds meaty body and savory flavor to the stuffing.
Cooked artichoke bottoms
Add tender artichoke flavor and texture to the stuffing.
Bread crumbs
Bind the stuffing and absorb butter and juices for a moist filling.
Reduced allemande sauce
Adds richness and body, helping the stuffing hold together.
Butter
Adds fat and flavor, and browns the topping in the oven.

The step that matters

Bake until golden. Baking in a hot oven browns the bread crumb topping through the Maillard reaction, giving flavor and color. Watch closely so the crumbs brown without scorching before the filling heats through.
