Provide the main body and starchy, creamy texture of the soup.
Veal trimmings

Fat pork
Adds fat and savory richness to the broth as it renders during simmering.
Onions
Contribute aromatic sweetness and depth to the broth.
Carrots
Add gentle sweetness and aromatic depth to the broth.

The step that matters

Simmering until well cooked. The chestnuts must be fully tender before splitting and layering; undercooked chestnuts stay firm and grainy rather than soft and creamy, and the simmer should stay gentle so the broth remains clear.
