What each ingredient does

Fat pork
Renders fat and browns, flavouring the base for the broth.
Potatoes
Break down slightly as they cook, adding body and thickening the chowder.
Green corn
Adds sweetness and texture to the chowder.
Flour
Lightly thickens the broth as it cooks over the layers.
Milk
Adds creaminess and richness to the finished chowder.
Crackers
Soak up liquid and help thicken the chowder.

The step that matters

Straining the broth through a fine sieve. Straining removes cooked onion pieces and bits of pork so the broth is smooth. Adding the milk after the broth has boiled helps prevent it from curdling or scorching.
